Terroir
Bodegas El Paraguas understands the vineyard as a family unit. Each plant is a member of a family and, therefore, each member of the family will contribute with some or other things to the family. With these wickers, we start from the base that not all plants meet the demanding requirements that we pursue for the production of wines; although every day and every year we educate them so that, one day, they reach that minimum essential status so that their clusters make up one of our wines.
With this base, Bodegas El Paraguas elaborates each grape variety of each vineyard -with the exception of the wine Fai un Sol de Carallo– separately and according to a method of elaboration that is considered after studying the nature of each harvest and the potential of the grapes before harvest.
Regardless of the type of winemaking, all the plants come from vineyards with traditional plantation frames, very tight -up to 1 meter by 1 meter-, with great dispute between the plants so that the production is limited, never more than 5,500 kilos per hectare. Likewise, we do not contemplate the mechanization of the vineyards because we believe that, in the long run, it may alter the composition of the soil. Therefore, we do not use herbicides and we limit the treatments to the maximum. Let’s not forget, that we are still in Galicia and diseases such as mildew, powdery mildew or botrytis are usual in a wet or rainy year.
As for the type of driving, depending on the grape variety and the payment, we will work with simple guyot, single string or double guyot. The pruning of the plants generally takes place during the month of December. Finally, every twelve years, we incorporate a natural fertilizer of cows to balance the soil.
